PLUM ENERGY BARS

A perfect on-the-go snack packed with the natural sweetness and fiber of dried plums.

Ingredients:

1 cup ZesTee Natural Dried Plums (prunes), chopped
1 cup rolled oats
1/2 cup almonds, chopped
1/2 cup sunflower seeds
1/4 cup honey or maple syrup
1/4 cup almond butter
1/4 cup unsweetened shredded coconut
1/4 cup dried cranberries or raisins
1 tsp vanilla extract
1/2 tsp cinnamon
A pinch of salt

Instructions:

1. Prepare the Pan: Line an 8×8 inch baking dish with parchment paper.
2. Combine Dry Ingredients: In a large bowl, mix together the oats, almonds, sunflower seeds, shredded coconut, dried cranberries, cinnamon, and salt.
3. Prepare Wet Ingredients: In a small saucepan over low heat, combine the honey (or maple syrup) and almond butter. Stir until melted and well combined. Remove from heat and add vanilla extract.
4. Mix Ingredients: Pour the wet mixture over the dry ingredients and add the chopped dried plums. Stir until all the ingredients are evenly coated.
5. Form Bars: Transfer the mixture to the prepared baking dish. Press down firmly to ensure the mixture is tightly packed and even.
6. Chill: Place in the refrigerator for at least 2 hours to set.
7. Cut into Bars: Once set, lift the mixture out of the dish using the parchment paper and cut into bars.
8. Store: Store in an airtight container in the refrigerator for up to a week.

Ingredients:

1 cup ZesTee Natural Dried Figs, chopped
4 cups mixed salad greens (e.g., arugula, spinach, and romaine)
1/2 cup walnuts, toasted
1/4 cup crumbled goat cheese (optional)
1 small red onion, thinly sliced
1/2 cup cherry tomatoes, halved

For the Vinaigrette:

1/4 cup olive oil
2 tbsp balsamic vinegar
1 tbsp honey or maple syrup
1 tsp Dijon mustard
Salt and pepper to taste

APRICOT ALMOND CAKE

A moist and flavorful cake made with sun-dried apricots and almonds, perfect for any occasion.

Ingredients:

1 cup ZesTee Organic Sun-Dried Apricots, chopped
1 1/2 cups all-purpose flour
1/2 cup almond flour
1 cup granulated sugar
1/2 cup unsalted butter, softened
3 large eggs
1 tsp vanilla extract
1/2 cup milk
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup sliced almonds for topping

Instructions:

1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, almond flour, baking powder, baking soda, and salt.
